Cucumber Watermelon Salad

Summer salads, is there anything better?? As much as I try to eat healthy and incorporate salads into my diet, there is something about warm weather that makes it so, so much easier.  Bar B Que meat paired with crisp lettuce, juicy tomatoes, the crunch of fresh peppers, that refreshing bite of cucumber… Lord my mouth starts watering just thinking about it.  
Today is Fathers Day and here in Ottawa, the sun is shining and that grill is calling our name, Ribs and Chicken covered in Bone dust paired with salads.  
Garden Salad, Caesar Salad, Potato Salad, all good choices but today let’s take a step outside of the box and try something new.  This is one of our favourite summer salads and the perfect combination with BBQ Ribs and Chicken.

1 English Cucumber
1 seedless watermelon wedge ( 4-5 inches wide)
1 tbsp red wine vinegar
1 small garlic clove
3 tbsp olive oil
1/4 tsp salt and pepper
1/4 cup shredded mint leaves
1/2 cup crumbled feta

Start with cucumber and watermelon.  Cut cucumber lengthwise, then again lengthwise.  Finally cut crosswise into chunks ( no need to peel) one inch cubes work best.  Cut watermelon into the same size chunck, Place in large bowl and mix together.  Mouth watering yet??

In a small bowl, whick vinegar with garlic, salt and pepper and oil.  Drizzle over the melon and cucumber.

 I have dried mint from my garden that I use if I have not been to the store for fresh mint. Either work.

Add mint and Feta to the mixture.

And there ya have it the perfect summer salad.  Add chicken and some pasta salad and the perfect summer dinner.

The three wonderful men that raised me, 

 My Dad ( shown with me when I was just a wee little thing, he was taken at the young age of 44 and I still miss him every day),  My Papa, shown here with me at my High school graduation, my parents live in Saudi Arabia so I lived with my grandparents through High School and University ( Also taken way to soon from our lives),  and finally my stepfather Lloyd who has filled that void in our lives and been a wonderful dad. ( us at a Senators vs Bruins game, he is a Boston fan)

  • This salad is amazing! I'd like to try making this on a sunny hot Indian summer weekend, before the fall chill sets in for good and there is still good watermelon around – good to the last one!
