Kentucky Bourbon Chili Chocolate Mousse

A couple years ago we were having a dinner party for St Patricks Day, I started searching for dessert ideas and came across the Baileys Irish Cream Mousse and a Chocolate Bourbon Mousse at the same time.  Well, me being me, decided to make both, and then presented servings of both to all our guests.  Both were a huge hit and became a  must on the rotation list. For some strange reason I had not made either in about a year when Kent asked me to whip up the Baileys for my Birthday, well that meant I had to then make this one soon after. A light chocolate dessert with a hint of ” Adult” in every bite.

Fast forward a few years and I decided to up the recipe slightly and used a Lindt Chili Chocolate. it adds a slight bite. I also used some uber large wine glasses to serve and used some drizzled chocolate to pretty them up.

Kentucky Bourbon Chocolate Mousse

A Bourbon Chocolate Mousse that is a light and flavourful dessert. Creating the perfect mix of sweet

Ingredients
  • 1/4 cup sugar
  • 1/3 cup bourbon
  • 1/4 lb chocolate milk or chili
  • 2 cups cream
  • 2 egg whites
Instructions
  1. heat the sugar and bourbon over a medium heat until sugar is dissolved

    Melt the chocolate over a double boiler ( or if you have mastered microwaving melting so much easier.

    add bourbon mixture to melted chocolate and add two tablespoons of cream

  2. set aside to cool

  3. whip egg whites until stiff peaks form

    add slowly to chocolate mixture

  4. whip remaining cream until peaks are formed and add to mixture

    spoon into 4-6 serving dishes ( I love wine glasses drizzled with chocolate)

    Set aside to cool and set for a few hours

    serve
