It is January and that means we start dreaming about Super bowl celebrations. OK well I start dreaming and planning celebrations for all the big games. Sharing an awesome 7 Layer Dip served in mini cups for a less mess celebration. Best part of this, easy to make for individuals, aka for much smaller gatherings. This works for 2 -12 depending on how much you want to make.
Are you still planning a big spread for the big day or have you gone minimalist? Me, any excuse to set a table, create a celebration even if it is for two. Embrace te positive, drink the wine, buy the shoes and have the party (for two).
7 Layer Dip in Cups
My 7 layer dip recipe has been created to yield 12 individual servings. To scale this recipe, use approximately two tablespoons each of refried beans, guacamole, and sour cream per 5-oz. appetizer cup. Then top each cup with chopped 3-4 cherry or grape tomatoes, one tablespoon cheese, 3-4 chopped black olives, and a few green onion slices.
I mean honestly how easy peasy is that. Plus as a bonus keeping it in mini cups allows for less fuss, less mess and thus less cleanup. Woohoo who doesn’t love that idea.
Prep time time is minimal, only 10 minutes and clean up is a dream And as a special bonus Cook time is non existent.
What you will Need for the Super Bowl Appetizer
The 7 layer dip has a two step process, making homemade guacamole and then creating the dip cups. I have seperated the ingredients into Guac and dip for your convenience.
Guacamole Ingredients:
- large ripe avocados (2)
- large cloves fresh garlic, finely minced, recommend 2
- 2 T. fresh lime juice
- Sea salt and pepper, to taste
Remaining Ingredients:
- 1½ c. sour cream
- 2 t. chili powder
- 1 t. ground cumin
- 1 t. garlic powder
- Sea salt and pepper, to taste
- 1½ c. refried beans
- 1 pint cherry or grape tomatoes, chopped small
- 1 c. 4-cheese Mexican blend, finely shredded
- 1 15-oz. can black olives, drained and chopped small ( I only add olives to some not all)
- 3 large green onions, green parts only, sliced thin
To serve: blue tortilla chips is preferred but I also throw out some veggies just in case and I provide Tasting spoons for a just dig in dish.
How to create the 7 Layer Dip Cups
The directions are so very simple. Make the guac and then put the cups together. I also like to go a tad overboard and create the perfect serving area so check below for fun football trays you can use. Also not everyone is an Olive fan ( I know how crazy) Personally I only add olives to a few of the cups and then keep a small bowl beside the cups so everyone can garnish as desired.
- Slice the avocados in half lengthwise and remove the pit. Scoop the flesh out with a spoon into a large bowl. Add garlic and lime juice, and season with salt and black pepper, to taste. Mash with a fork until thoroughly blended and smooth. Cover tightly and set aside
- Add the sour cream, chili powder, ground cumin, and garlic powder to a bowl. Season with salt and black pepper, to taste, and stir to combine. Set aside.
- To assemble, add approximately two tablespoons refried beans to the bottom of each cup with a small spoon, followed by a layer of guacamole and the seasoned sour cream (two tablespoons each), in each cup.
- Finish each cup with a layer of chopped tomatoes (roughly 3-4 per cup), followed by one tablespoon finely shredded Mexican cheese blend, 3-4 chopped black olives, and a few green onion slices.
- Garnish each cup with a blue tortilla chips, if desired, and serve immediately with additional blue tortilla chips on the side. Enjoy!
