Baileys Oreo Cheesecake another scroll through Facebook and how can I re-create this awesome dessert. Kent is a huge fan of Cheesecake and also a fan of Bailey’s so how amazing would this be. When I saw this simple and easy recipe for a dessert with a cookie base, well it had to be saved. (and tried and amended for moi of course)

Before we start discussing the recipe can I talk about the influence of Facebook. I, well Kent and I both actually are addicted to cool recipes we find on social media. My go to is Facebook. I mean hello Hot Fudge Cheesecakes or Pillsbury Apple Cinnamon Buns. A few little creations inspired by my scrolling.
Saving the videos we see, re-watching them later to see how easy something may be to make. I feel like I could have an entire blog dedicated to As seen on Facebook. Just like the Pinterest blog where you get shown is this really as easy as it seems.
For this scrumptious recipe, it is exactly as easy as it seems. Very little muss and fuss. Now truth be told this is inspired by Facebook similar to my Oreo Chocolate Lasagna but adapted by Linda.
Cheesecake and Oreo Cookies
I am a lover of Oreo’s but truth be told I never thought about using them as a cheesecake base. It is genius actually, little to no mess, individual desserts and not overly sweet.
Once again, we were having Company over and this seemed the perfect time to test it out. I have confessed in the past that I use my guests as guinea pigs for my new recipes and new baking attempts. Is that a strange thing to do? It is quite self serving for me actually.
Creating desserts when guests are coming mean I will not eat all of them. Sweet stuff is my addiction and I can never stop at one.Sweet and Bailey’s are always a great combo, I mean the Bailey’s Cookies and Cream Mousse turned out OK.
Mini Oreo Cheesecakes with Bailey’s
The Oreo cheesecake dessert is the perfect summertime treat, remember my hot fudge edition? It is perfect for summertime sweetness and actually the perfect Covid treat. Served individually guests can help themselves to one or two (or three). You do not handle the food and serving is a breeze.
TIP: Unlike cupcakes and muffins the liners do not get discoloured so they still look pretty when you are serving guests.
What you will need for Mini Bailey’s Oreo Cheesecake
Let’s get cheesy shall we, gather the ingredients and get ready to dazzle your guests.
- cream cheese ( 2 packs)
- sugar
- mexican vanilla
- eggs
- sour cream
- baileys
- chocolate chips
- Oreos
How to Create perfect Mini Bailey’s Oreo Cheesecake
- line muffin tin with liners and add one Oreo cookie to each
- in a bowl add sour cream, cream cheese, eggs, vanilla, sugar and Bailey’s and blend well
- add in crushed Oreo cookies
- a dollop of cheesecake mix should be added to every liner
- add a dollop of melted chocolate chips on each cheesecake
- bake at 300 for 22-25 minutes
- remove, let cool and serve
Can these be Frozen or Stored
These delicious cakes are easily stored in the fridge for a week, in an airtight container. They can also be frozen and served at a later date. I would not store over three months in the freezer for best results

- Cupcake liners
- Muffin Tins
- hand mixer
Ingredients
Instructions
- line muffin tin with liners and add one Oreo cookie to each liner (18)
- in a bowl add sour cream, cream cheese, eggs, vanilla, sugar and Bailey's and blend well
- add in 6 crushed Oreo cookies
- a dollop of cheesecake mix should be added to every liner
- add a dollop of melted chocolate chips on each cheesecake
- bake at 300 for 22-25 minutes
- remove, let cool and serve
