I have been on a few Carnival Cruises, love those vacations. Actually. I just booked another series of Back to Back Cruises for next week Know what I love as much as the vacation? Their Carnival Chocolate Melting Cake or Mickey Mouse Cake. On the Carnival Glory they always referred to it as Mickey Mouse because it was served with two small bowls of ice-cream.
Last year on the Carnival Elation we did the Chef’s Table and had a tour of the Kitchen. Guess what, they walked us through the process and gave us the recipe. Holy hannah I had the recipe in my hands and thought I really need to try this for Valentine’s Day.

Carnival Chocolate Melting Cake
On every cruise we took, dinner was always a special affair. An opportunity to dress up. An occasion to dine not just eat. Regardless of the dinner selection I could not ever, not order the Mickey Mouse. Seven days of dining and seven desserts the same.
I truly am a traditionalist in a funny way. Meting Cake and Carnival cruise just go hand in hand. I am going to try and sample a few more different desserts on my next cruise.
The cake is more like a warm gooey pudding. A dark rich chocolate delicacy that once you try yo will be addicted.
What you will need for a Mickey Mouse Cake
Let’s gather what we need and get to baking shall we?
- 6 oz. dark chocolate chips
- 6 oz butter
- 4 eggs room temperature
- 1.5 oz . sugar
- 1 oz flour
My Homemade Mickey Mouse
I was pretty pleased with my results, although I should have cleaned up my pots slightly. Oh well totally authentic right? I don’t always make immaculate plates when I am cooking. Now this was a simple and easy recipe to follow but as a footnote do not prepare in advance and let sit without cooking.
I found that making the mixture in advance and letting it sit for two hours prior to baking was a mistake. It is better to prep the ingredients but hold off on the mixing until you plan on baking. Serve it warm with ice-cream or strawberries.
I opted for chocolate covered strawberries because it was Valentines Day
How do you make this Dessert
- Preheat oven to 390-degrees.
- Melt chocolate and butter in a small saucepan, cool 10 minutes.
- In the meantime, in a separate bowl, whisk eggs and sugar together.
- Add flour and whisk until flour is well mixed in.
- When chocolate has cooled stir in egg mixture.
- Fill 7 oz. ramekins about 3/4 of the way full with chocolate batter.
- Bake for 14 minutes. ( in another pan surrounded by water)
Can you make the Melting Cake in Advance?
Big tip as i indicated earlier, do not mix this ahead of time. This is one of those set all the ingredients at the ready but mix only when it is ready for the oven.
Can you Freeze this dessert?
No this is a make and eat type of dessert. It is one of the few make only when ready to eat and do not expect to save any for later.
