I could not resist, time to start baking and I have been fascinated with the simple cake pops. Have you caught the fever?  Two ingredient cake pops in fun molds.  OMG It was a mind blown moment, I could create my own festive Christmas Cake Pop without turning on the oven.


Totally serious here folks, this is a no-bake recipe that is perfect for the holidays. I am also thinking when life returns to normal perfect for those school events the kids forget to tell us about.  The planning has started to create a Valentine’s Day Pop and maybe a Shamrock or two.

Two Ingredient Christmas Cake Pops

The credit for my inspiration goes 100% to Aimee over at Aimee Geroux formerly Extreme Couponing Mom. I happened to catch Aimee’s picture on her Instagram account and obviously had to hop over.  Well I was mesmerized by the ease and simplicity of the dessert.

I immediately started picturing how I could style the pops and what flavours I would try. For this baker I also want to try these with homemade cupcakes or cake and some buttercream icing.  That my friends is for another day.  Today we are focusing on a quick and easy dessert that requires no oven.

Cake Pop Heaven

This is for the mom’s once life returns to normal. Picturing the children telling you they need a treat for the class. What do you do.  You are also figuring every other mom has run to the grocery store for ready made cakes and cookies.  Well you can too but let’s up it a notch.

I have a collection of molds at home already.  Some actually were just chocolate molds but I worked around the depth issue. Today I am using the 4 tray popsicle mold I purchased this summer.  And I also used my snowman chocolate molds for a fun twist.

Ingredients you will need

I was not kidding you when I said this was a two ingredient dessert but I guess you could also add some candy decorations making this a three ingredient treat.

  • 12 ready made iced mini cupcakes
  • Willet chocolate melts ( or white chocolate chips) maybe two colours
  • crushed candy cane

Equipment Necessary

You will need a few special tools to make the cake pops

  • large bowl
  • candy molds
  • popsicle sticks

How do I make these tasty Treats

The cake pops are really and truly an easy dessert but they do take some time.  You need to let the pops settle in the freezer for a few hours to set the chocolate.

  1. Separate the icing from the cupcake, although in hindsight I am not sure why I did this because it all gets mushed together
  2. combine the icing and cake into one bowl and mush together, leave the sprinkles on for a fun twist.
  3. melt your candy melts in the microwave.  I go 30 seconds at a time.
  4. once the chocolate is melted cover the bottom and sides of the molds, this doesn’t need to be thick. Make sure it is all covered. Let set for a few minutes. This is a good time to actually mix the cake batter,  Helps distract you and allows the chocolate to set.
  5. add in a dollop of cake batter.  Be careful to leave room at the top for the final layer of chocolate. Insert your popsicle stick now
  6. place mold in the freezer for a few hours ( or if you live in Northern Canada the garage works well lol)
  7. Remove the cake pops gently from the molds
  8. Place on parchment paper and add some additional chocolate drizzle and sprinkle with decorative candies.  This step is optional but makes for a really pretty pop.
  9. If these are for gifts, wrap in cellophane and tie with a bow or place on a serving plate and enjoy.

They are such a fun treat, I started with Vanilla for the standard pops but went Chocolate for the Snowflakes and Snowmen.  I keep them in the freezer because they thaw so very quickly and it keeps the chocolate firm.

This is truly a tasty little treat.  Plus as a bonus the kids can help out.  let them mix the cupcakes together and then at the end they can drizzle the decorations on the pops making them their own creations.

Festive Christmas Cake Pop

  • add final layer of chocolate, clean up the edges while the chocolate is still warm. Trust me once it hardens it is tougher to remove.
  • place mold in the freezer for a few hours ( or if you live in Northern Canada the garage works well lol)
  • Remove the cake pops gently from the molds
  • Place on parchment paper and add some additional chocolate drizzle and sprinkle with decorative candies.  This step is optional but makes for a really pretty pop.
  • If these are for gifts, wrap in cellophane and tie with a bow or place on a serving plate and enjoy.
