Cowboy Crack Soup with Chicken and Biscuits
Last Updated on 2026-10-03 by Linda
Fall is upon us, which means it is time to pull out the soup pot and get a little comfort food simmering on the stove. Enter Cowboy Crack Soup, my creamy, cheesy chicken soup topped with Pillsbury biscuits. Yep, soup and biscuits all in one dish.
I started out planning to make Cowboy Crack Soup, but halfway through I decided to make it my own. Out went the spinach, and in went carrots, sweet corn and celery. I also mixed up the cheese, using cheddar, mozzarella and jalapeño havarti. A little change of plans, and dinner was still delicious.

Cowboy Crack Soup
This is one of those recipes that makes good use of a rotisserie chicken or whatever cooked chicken you have left over. Add chicken broth, ranch seasoning, vegetables and plenty of cheese, and you have a hearty dinner coming together on the stove.
But I did not stop at the soup. Once everything was melted and creamy, I poured it into a casserole dish, covered it with Pillsbury biscuits and popped it in the oven. Golden biscuits on top, cheesy chicken soup underneath. Seriously, pass me a spoon.
Now apologies in advance for the lack of great pictures because I was videoing the recipe the whole time, so no time for snapping lol.

Ingredients for Cowboy Crack Soup
Time to get the grocery list ready, or quite possibly you already have a few of these ingredients on hand. Use cheddar cheese if that is what you have, or try my combination of cheddar, mozzarella and jalapeño havarti.
☐ Rotisserie chicken or leftover cooked chicken, shredded or chopped, amount to suit your preference
☐ 3 cups chicken broth
☐ 1 cup water
☐ 1 package ranch seasoning mix
☐ Celery, chopped, amount to suit your preference
☐ Carrots, chopped, amount to suit your preference
☐ 1 can corn, drained
☐ 1 package cream cheese, cut into cubes
☐ 2 cups shredded cheddar cheese, or 2 cups total of cheddar, mozzarella and jalapeño havarti
☐ Pepper, to taste
☐ 1 cup heavy cream
☐ Pillsbury refrigerated biscuits, enough to cover the casserole dish in a single layer

Time to Make the Soup
Start the soup on the stove. Place the cooked chicken, 3 cups chicken broth, 1 cup water and ranch seasoning in a large pot. Stir together and bring to a gentle simmer.
Add the vegetables. Stir in the chopped celery, chopped carrots and drained corn. Simmer gently until the carrots and celery are tender, stirring occasionally.
Make it cheesy. Reduce the heat to low and add the cubed cream cheese and 2 cups shredded cheese. Stir frequently as the cheese melts. I used a combination of cheddar, mozzarella and jalapeño havarti.
Add the cream. Stir in the pepper and 1 cup heavy cream. Continue heating gently until all the cheese is completely melted and the soup is smooth and creamy.
Fill the casserole dish. Preheat the oven to 400°F. Carefully transfer the hot soup to a large oven-safe casserole dish, leaving room at the top for the biscuits and bubbling soup.
Add the biscuit topping. Arrange the Pillsbury biscuits over the soup in a single layer.
Bake and serve. Bake at 400°F for approximately 15 minutes, or until the biscuits are golden and cooked through underneath. Check the directions for your biscuit variety and allow extra time if needed. Let the dish rest for a few minutes before spooning into bowls.

Tips for Making Cowboy Crack Soup
Chop the carrots and celery into small, even pieces so they cook more quickly and fit nicely on your spoon.
Cube the cream cheese to help it melt, and stir the soup over low heat once you add the dairy.
Use 2 cups of cheese in total, whether you choose all cheddar or a blend.
Taste before adding extra seasoning. The ranch mix, broth and cheese already bring plenty of flavour.
Choose a casserole dish with enough room for the soup and biscuits. Set it on a baking sheet to catch any bubbling drips.
Check the underside of the biscuits as well as the tops. They should be cooked through before serving.

I watched the whole video, and you look so cheerful! And the recipe is absolutely mouthwatering. I’ve only just started making some videos myself, and I honestly have no idea what I’m doing when it comes to editing, haha. Mine aren’t even comparable to yours! You’re a real pro! 🙂
