Happy Monday Folks and did you know that Christmas Eve is in less than nine days, NINE Days OMG I feel like a little cartoon character running around like crazy cus I am no where near where I usually am in my preparation. I have just begun my Christmas baking and seriously I am like a psycho baker at Christmas and just starting, well that could have been a disastrous thing….but if you follow me on Instagram you will know that I went shopping on Friday and picked up this baby. I believe I am more excited about this red machine that I was my first car coincidentally also red ( 1985 Plymouth Horizon and probably the same size as this baby) I LOVE this machine, my new Kitchen Aid Artisan Series is a dream, and I wonder why did I struggle without this for so long. Whipped shortbread you will be a breeze.

My Baking Frenzy and Cookies and Cream Blossums

I was told the secret to perfect buttercream is whipping the butter for fifteen minutes.  Originally I could not even fathom holding my mixer for five minutes let alone fifteen.  I can now tell you whipping the butter for fifteen minutes does create the perfect frosting.
Saturday began my baking frenzy and I may have made Shortbreads, Thumbprints, and Swedish Strips. Plus Oreo Truffles, Peanut Butter Truffles, Peanut Butter Blossums and even Gingerbread Mousse Cups. Even Macaroon Cups,White Chocolate Mousse and  Chocolate Chip Shortbread,. Let’s not forget the Creme Caramel Sandwiches, snickerdoodles and Cookies and creme blossoms.  Holy crap, 13 types over the weekend I guess some may think that is a tad crazy.
Most of these recipes I have shared but the Cookies and Cream Blossums are new this year.  I discovered I had a bag of Cookies and Cream Kisses and I wanted to try something new. So I searched Pinterest, found a great concept except it called for a sugar cookie mix. Then I needed to google sugar cookies and combined the two for a fantastic addition to my cookie collection.Raspberry Thumbprints

Cookies and Cream Blossums

Ingredients

  • Sugar Cookie Base:
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter 1 stick, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract mexican vanilla works best
  • 1 Cup Chocolate Chips

Instructions

  • One bag of Cookies and Cream Kisses that will need to be opened ( do not eat them save them for the cookies)
  • In large bowl, whisk flour, baking powder, and salt. With an electric mixer ( or your new Kitchen aid), cream butter and sugar until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture; beat until combined, slowly add chocolate chips.
  • Preheat oven to 325 degrees. Line baking sheets with parchment. Using a one inch scoop, create dough balls, roll in white sugar and space evenly on sheet.
  • Bake 6-8 minutes, remove from oven and immediately place a kiss in the center of each cookie.
  • Place gently on cooling rack and there you have it deliciousness to savour with a big glass of milk, or coffee, or tea or hot chocolate….. you get the picture just enjoy.

For my Monday Outfit I chose my favourite Michael Kors Sweater over a LBD. Found at Target for a steal of a deal last year.  Add a pair of Leopard heels for interest and there ya have it simple, easy, classic pieces.  Nothing flashy today just a classic work outfit and one with a bit of give to make up for all the cookies I sampled this week.

    Wow, aren't you a baking maniac. I love your new red mixer, I guess you need a powerhouse like that if your going to bake that many cookies. You will have many lucky friends when you hand these out. Happy Holidays!

    Very, very pretty and of the season but not goofy Christmas green! Pretty color on you, especially. Did you darken your haircolor or change to reddish? Even if it's just the flash, you look great!
    It's just Dan and I so we don't decorate … ours are all at the restaurant. Feel like I got to go "home" for a minute with a peek in your kitchen! Nice of you … thanks!
