I am forever on the hunt for fresh and easy summer desserts. With a sweet tooth that never gets satisfied I always seem to crave desserts. Something light and refreshing is the go-to in the summer months. Plus who wants to be in the kitchen baking all day? For Kent’s Birthday i thought I would try an adaptation of a fun recipe from last summer. I made a Frozen Margarita Pie that was a huge hit. So 2017 has been the summer of Pina Colada for us so it seemed a natural leap to go in that Pie direction.
Pina Colada Pie
Light, refreshing, sweet it was hitting all of the Pro’s on my list and none of the con’s. This is a simple dessert that requires no baking.
It is one of the easiest pies you can ever make, five ingredients that come together in a simple and easy dessert. Perfect for Summer BBQ’s, Picnic get togethers or just for a special weeknight dessert. Similar to Key Lime Pie but more Chic.
If you prefer to make your own graham crust you can but I find it far more convenient to buy an already made crust. For this one I actually went with the Kebler Shortbread crust.
Frozen Pina Colada Pie
Ingredients
- 1 package cream cheese
- 1 tub coolwhip
- 6 oz pre made Pina Colada mix
- 1 can Eagle Brand Condensed Milk
- zest of orange or pineapple or lime
Instructions
- whip all the ingredients together, add to pie crust and freeze for 4 hours.
- add zest to top
- slice and serve
