Gluten Free ain’t as bad as one might think, OK honestly it is not bad at all. We have a dear friend who has many an allergy gluten, dairy, eggs, soy, well you get the picture right. I am always on the hunt for dessert recipes to try so when she is visiting she is not left out. My standard use to be my Yonana’s machine. We have mousse she has frozen banana cream. Today though I modified my Eggie Cheesecake to be a Gluten free dessert.
Gluten Free Cheesecake
Gluten free was really easy to achieve, use my Eggie Cheesecake recipe without the crust. I found these really cute silicon cupcake form a few years ago at Michael’s. They make the perfect dessert form don’t they. The colours are Spring and Easter friendly. Dessert without the crust. I could not achieve the dairy free option though.
I did find a coconut milk cool whip substitute instead of using whipping cream but alas no sub for cream cheese. Anyone know of a sub for cream cheese ( and available in Canada)? I would love to make this gluten and dairy free for her. I could sub in semi sweet chocolate pieces for the eggies She can have dairy with lactose pills but it still would be fun to try.
What will you need for this Dessert
A few simple ingredients and your family will be thanking you. Plus some fun serving cups
- 1 c icing sugar
- 2 bricks cream cheese regular
- 2 c whipping cream
- 1/2 c crushed chocolate candies
- 1/2 c mini Dove covered eggs ( discovered the candy coating on others contains gluten)
Instructions for Gluten Free Eggie Cheesecake
- whip the whipping cream or try cool whip ( reserve some whip cream for a topping 1/2 cup)
- slowly add cream cheese and beat till smooth
- add crushed chocolate candy( fold in)
- pour mix into silicone mold and set in fridge for at least two hours, overnight is better
- add a few Dove Eggs on top and serve
Easter Candy That Is Not Gluten-Free
Lesson learned, I use to use mini eggies and discovered the candy coating has gluten. You have t be so careful on the journey of discovery.

A light and airy no bake cheesecake.
