Friday nights at our house are Pizza night, not your normal take out pizza , we have a gourmet, make your own pizza party night almost every Friday. It all started a few years ago when Kent discovered a gourmet pizza dough recipe in Vines, a food and wine magazine that we subscribe to. The recipe was unique in that it called for white wine instead of water.
 
Well, a Family Tradition started and has continued,  such a great tradition that the boys continued it when they went back to Thunder Bay. We gather around the kitchen and as Kent prepares the dough we catch up.  A bottle of wine, some cheese and maybe the current edition of A Wine Magazine.

Ingredients needed to make  Dough

How do you make homemade pizza dough is a question often asked in our home.  Kent is a gourmet pizza maker. Once you try this you will never go back to a standard mix. If you are more into a Zucchini crust, hop over and try that recipe instead.
 
  •   active dry yeast
  •  honey ( sometimes we use garlic honey)
  •  salt ( we use sea salt always)
  •  Olive Oil
  •  all purpose Flour (sometimes we use whole wheat)
  •  white wine ( anything that is opened)
  •  warm water
  • sometimes we add Italian spices and/or cayenne pepper to the dough
This makes two 12 inch pizza crusts.

How to Make Pizza Dough


I have laid out the simple steps to make homemade pizza dough.  I can say the simple steps because I have “watched” Kent make this dozens of times lol.

 
  1.  Mix yeast, water, wine and honey in a bowl, cover with plastic wrap and leave for five minutes. when you return after five minutes and remove the plastic the mixture should be a beige slightly bubbly goppy mixture with a delicious yeast smell.
  2.  Add salt, olive oil, flour and any other seasoning you may like. ( we mix by hand and when I say we I mean Kent and/or Ryan if he is in town, but you can use a dough hook).
  3. Once it has been thoroughly mixed it should have a springy texture.
  4. Cover with plastic wrap and place in a warm spot for 50 minutes.( the dryer if you are doing laundry or a sink half filled with warm water & cover with a hand towel or two.)
  5. While the dough is rising, get the ingredients together.
  6. After 50 minutes the dough will have increased in size by half, at this point you can begin preparing the pizzas.
  7. Preheat oven to 475
  8. Sprinkle some flour on your counter and turn bowl upside down so dough falls on the counter, knead slightly and form into a ball,  divide into two. ( if you are using a pizza stone heat it up slightly)
  9. Place dough on pan and roll out the dough.
  10. place pan with dough in preheated oven for one minute, remove and add your ingredients starting with the sauce. dress your pizza, 
  11.  bake at 475 for 7-10 minutes ideally on the middle rack. remove and serve hot.

Pair with a nice zinfandel, or a wine of your choice

Pizza Dough

The perfect homemade pizza dough with an adult twist. Adding a bit of white wine and honey turns the traditional dough into a gourmet delight

Ingredients
