I flew home from Winnipeg to discover Kent had discovered a fun new way to create a  Healthy Fried Chicken Alternative. A Garlic Parmesan Chicken is a recipe you will want to save.


I have been trying really hard to modify my eating habits since the New Year. Well actually since my Doctor’s appointment but let’s not quibble over details. Fortunately I have the best chef in the galaxy living with me.

Garlic Parmesan Chicken

Honestly who would ever have thought that coating a chicken breast in egg and Parmesan would be a tasty alternative. The flavour of the cheese almost makes you feel like you are cheating with deep fried cheese balls. A beautiful textured coating and a relatively healthy choice.

Carbs and sugars have not been my friend but in today’s world finding quick alternatives can be tough. Having an at home chef sure helps me though. Honestly if Kent did not love cooking/creating so much I would probably live on soup and salad with a side of carb.

Why does living and eating healthy have to be so tough. I keep telling myself I quit smoking so managing cravings for food should be a piece of cake. Except now I am thinking about cake cuz that is how my mind works. Sweets are what I crave.

Back to dinner, sure was nice to get home from the airport to a delicious dinner.  Chicken , salad and beans and then a quiet relaxing evening.

Preparing the Chicken

Its a simple process starting with boneless, skinless chicken breasts. FYI We get ours fresh from Ontario Farmers through NutraFarms, a great option if you are looking to support local.

Start with slicing the breast through the middle creating a butterfly look. The chicken then gets coated in an egg mixture, rolled in the Parmesan and then fried in olive oil.

Because the chicken is thin it only takes about three minutes a side.

What you will need for Garlic Parmesan Chicken

The ingredients are very simple

  • 4 6-oz. boneless, skinless chicken cutlets
  • Sea salt and black pepper, to taste
  • 1 large eggs 
  • 1 c. Parmesan cheese, finely grated
  • 1 c. olive oil, divided*

Simple Instructions to make Garlic Parmesan Chicken

  1.   Start with slicing the breast through the middle creating a butterfly look.

  2. crack the egg in a bowl and whisk

  3. add garlic salt to egg mixture

  4. add salt and pepper to taste

  5. coat each chicken breast in egg mixture

  6. dip and roll in Parmesan

  7. add olive oil to frying pan or you can use butter with oil

  8. place chicken in hot oil, cook three minutes on each side
