If you have been following along you will recall that I was the lucky recipient of a box of goodness from Hello Fresh. A box of goodness containing all of the perfect ingredients for three amazing meals. I thought it would only be fair to actually show you what we made and let you know how delicious they were. We selected the Garlic Lime Chicken first and it did not disappoint. Opening the box we discovered the freshest of ingredients. Plus bonus option we were three not two so with the addition of a chicken breast and one head of corn we had plenty for each of us.
Everything we needed for the dinner was included plus they create a “Bust Out” list a the top. This list includes all of the tools and utensils you will need to prepare your meal. As you can see everything you could imagine needing is included. They do presume that you own Salt and pepper and olive or canola oil.
Meal Prep for Garlic Lime Chicken
The directions included indicate 15 minutes for Prep and 15 minutes to prepare. My recommendation is double that time or have many hands helping. Plus the cooking time for our corn was not what was indicated. It was not a complicated dish to prepare and it was well worth the time but just be prepared for longer than 30 minutes.
The grilled corn with the sour cream mixture was delicious. I am normally a butter gal but I would stick with this in the future.( follow the link for the deets)

Garlic-LIme Chicken with Avocado Salsa
- 2 Chicken Breasts
- 1 small pkg of grape tomatoes
- 1 avocada
- 2 cloves garlic
- 5 g cilantro
- 2 limes
- 1 tsp mexican chili powder
- 1 tbsp honey
- 4 tbsp mayonnaise
- wash and dry all produce, cut tomatoes in half. Mince the garlic,
- chop the cilantro
zest then juice the limes, Halve, pit and then cut the avocado in blocks, Peel and husk the corn
Marinate the chicken- combine half the lime juice, half the zest, half the garlic and half the chili powder in a medium bowl. Add the chicken and set aside.
add the chicken to a non stick pan, cook until golden-brown.
The salsa- in a medium bowl whisk the remaining lime juice and the honey with a drizzle of oil, add salt and pepper. Add the tomatoes, avocado and cilantro. Mix well
divide the chicken equally on two plates, and then top the chicken with the Salsa mixture.
Serve and enjoy
