Cheese Cake and Carrot Cake sometimes one just cannot decide. Well guess what sometimes you don’t have too. Last summer while surfing Kent discovered a video for a Carrot Cake Cheese Cake Cake. My goodness that is a mouthful literally and figuratively. Think about that for a minute. Cheesecake and Carrot Cake together. Mind blown
The Carrot Cake Cheese Cake Birthday Cake
I am a chocoholic but Kent adores his Carrot Cake, almost as much as traditional cheesecake. So when we stumbled upon this awesome cake on Facebook I had to try it. It was August and almost his birthday so how could I not at least test myself. It was a relatively simple cake to make but please give yourself some time.
I did not realize that I should make the cheesecake a day early to let it set. Embarking on a baking adventure on he day of his birthday did not give me a lot of extra time. Ever the “out of the box thinker” I opted to go buy a cheesecake that was already made. Cheater or genius you pick.
Next time I am anxious to try and use my no bake cheesecake recipe in the middle.
Cheese Cake or Carrot Cake or Both
The cake was a major hit. Sad fact for the life of me I cannot figure out why Kent would be lighting his own candles. I want back and checked the date and yep August 20th, so it was his Birthday. Possibly he was sharing with Pamela who shares the same Birthday.
The carrot cake portion was moist and tasty, fyi no raisins to spoil the taste. A basic carrot cake topped with cream cheese frosting and pecans, with a twist. I mean honestly who would expect a whole cheesecake in the middle?
Let’s Make a Carrot Cake

Preheat oven to 350F . Grease and flour two 9-inch cake pans.

In a large mixing bowl, combine sugar, oil and eggs until blended.

Add in flour, baking soda, baking powder, salt, and cinnamon.

Beat for about 2 minutes.

Add in shredded carrots.

Pour into prepared cake pans.

Bake for 30 minutes.

Cool on wire rack for ten minutes.

The remove from pans and cool completely.
Cheese Cake for the filling
It is recommended that you plan ahead for this cake but if you are lazy or late like me….. buy.

Prepare the cheesecake layer first. This can be done early in the day, or the night before. If freezing the cheesecake, can be stored 1-2 weeks in the freezer. Or you can cheat like I did and purchase a ready made cheesecake. Please don’t judge too harshly I actually ran out of time.

I have seen his done with New York Style Cheesecake but I may try it again with my no bake cheesecake.
Finally the Frosting
To make the Cream cheese frosting you need to follow a few simple steps:

In a large mixing bowl, combine cream cheese and butter.

Beat with whisk attachment for 3 minutes.

Add in sugar, vanilla, and heavy cream.

Beat for 3-4 minutes until light and fluffy.

Fold in chopped pecans. (save a few pecans for the garnish on top)
Let’s Eat Cake

To assemble the cake, layer one layer of carrot cake. Add the cheesecake then top with second layer of carrot cake. Spread on the frosting, first on sides then on top!

Store in the refrigerator, and let’s get eating.
This can be stored for a few days in the fridge.
Carrot Cake Cheesecake

- 1/4 cup heavy cream
- 4 cups powdered sugar
- 1 cup chopped pecans
