Homemade Chicken Pizza are ready in just minutes, and are a delicious leftover chicken recipe using just a few simple ingredients. It is the perfect Friday Night Dinner or lunch time snack. Honestly with the kids back to school working all week who has the time or energy on the weekend for formal dinners?
Now full disclosure the pizza is ready in minutes after a bit of advance prep. This is a Friday night relaxation dinner using leftovers and taking advantage of the fact you will have made your dough in advance and stored it in the freezer. Or if you have extra time, make the dough fresh and use it as a Family bonding, de compressing time. There is something very relaxing about kneading dough ( especially if you use a dough hook and a mixer lol)

Chicken Pizza done Right
We’ve enjoyed this hhomemade Pizza crust for years. Normally it takes a bit of time but I have two quick tips for you. Using a mixer and a dough hook cuts the time significantly and when the machine is mixing you and the family can be prepping the toppings. or Freeze the dough and
Pizza dough is perfect for freezing so you have some on hand when the craving hits! Our recipe yields two pizza pies so you can easily make one pizza now and freeze the second for later.
After the first rise, divide the dough in half. Lightly rub the dough you want to freeze in olive oil and wrap in plastic wrap. Place in a freezer safe bag and freeze. Dough will last for about 3 months in the freezer.
Prepping the Chicken
When it comes to the chicken used for this recipe, you also have a few options. You can bake boneless skinless chicken breasts ahead of time so that prep time is minimal or you can BBQ a few tasty breasts but that takes a bit more time. Remember this is supposed to be about quick and efficient so we can relax.
I like to plan ahead and during the weeks meal prep we try and cook a few extra breasts to use for sandwiches or other dishes. Today we are using leftover breast from our Margarita Chicken.
Y’all know I am all about tips in this post so here is one more for you. Always look for the Raised by a Canadian Farmer logo when choosing your chicken. We order our chicken directly from a farmer here in Ontario but if we need to supplement our stock we make sure the package has the right logo, look for that red chicken with the maple leaf.

Creating and maintaining over 78,000 Canadian jobs in various sectors; supporting chicken Canadian will create jobs, help local communities and grow the Canadian economy.
