Homemade Eggnog for the Holidays

Can we even think about the Christmas Season without thinking about Homemade Eggnog?  True confession I love eggnog but often turn it down based on calorie count. How stupid is that? I mean honestly calories and the holidays go together like well eggnog and nutmeg.  So on the search for a recipe I can enjoy guilt free.


Memories of Eggnog

Growing up I always remember mom and dad making eggnog. Truth be told my memories are often spotty at best but mostly I remember Dad and eggnog. Now that may be a tad faulty so mom forgive me but heck if it makes for a happy memory that is what matters right. Eggnog and Christmas created so many happy thoughts.

As I grew up I got to preoccupied with calories and time so I stopped enjoying the yummy treat.  Store purchased became a norm for company.  Spice it up with nutmeg and cinnamon and a bit of rum.

Today I thought I would share some memories of childhood and a homemade Eggnog.

Homemade Non-Alcoholic Eggnog

 If you love the rich, creamy taste of classic eggnog, but don’t like the idea of using raw eggs, this recipe is for you. For an adults-only version, add some rum, bourbon, or cognac to taste.

What you will need from the grocery store, or your kitchen:

Ingredients:

12 eggs
1 ¼ c. sugar
4 c. whole milk
2 t. vanilla extract
1 t. ground nutmeg
2 c. evaporated milk
2 c. half and half


How to Make Eggnog?

1)Combine eggs and sugar in a medium glass bowl and whisk until thoroughly combined. Transfer to a saucepan and stir in whole milk, vanilla extract, and ground nutmeg.

2)In a separate glass bowl, stir evaporated milk and half and half until combined.

3)Heat egg mixture over medium-low heat while stirring constantly to prevent the milk from scorching. When mixture reaches 160 degrees on a candy thermometer, remove from heat and slowly whisk in evaporated milk mixture.

4)Cool slightly before tasting. Add more sugar or nutmeg, if desired, before transferring to an airtight container. Refrigerate overnight or until thoroughly chilled. Serve in mugs and garnish with whipped cream, cinnamon sticks, or a dash of nutmeg.

That it is, now sit back and have a sip.
