Loaded Chicken Potato Casserole

- 1 pounds chicken breasts
- potatoes, red russet cubed
- 1/3 cup olive oil
- 3 tablespoons hot sauce
- 2 tablespoons garlic powder
- 2 teaspoons paprika we used Bourbon Paprika
- 1 tablespoon sal
- 1 tablespoon pepper
- TOPPING
- 1 cups fiesta mexican blend cheese or monterey jack and cheddar cheese blend
- 1.2 cup cooked bacon, crumbled
- 1/2 cup green onion, diced
How to make the Casserole
1. Preheat oven to 400°F
2. In a large bowl, mix together the olive oil, hot sauce, salt, pepper, garlic powder and paprika.
3. blanch the potatoes
4. Add the cubed potatoes and stir to coat. add the cubed chicken Then add the mixture to a greased baking dish.
5. pat mixture down
6. Roast for 45-50 minutes,
7. Add Cheese, bacon and green onion to dish and place back in oven
8. Bake 15 minutes or until until the chicken is cooked through and the topping is melted and bubbly delicious.

It's so great that your recipe includes red potatoes. I try to eat them as often as I can. The chicken is a heavenly added ingredient. The inclusion of the broccoli in your photos is, for me, the perfect touch. That's the one vegetable I would eat every day if I could!
