Hello Summer and thanks for finally showing up. It is crazy how much sunshine and warmth can put a smile on ones face isn’t it? For this gal summer sunshine is my jive. Good lord where did that statement come from. Never mind,enough silliness let’s get moving on real talk. Summer time and ice tea just seem to go hand in hand don’t they? So today I thought I would try something different Blackberry Ice Tea in the Instant pot. Except it wouldnt be me if it was only tea, let’s make it a cocktail.
Instant Pot Blackberry Ice Tea
I know it may seem a tad over zealous to make tea in an Instant Pot, but why not? It saves on the additional dishes, makes it uber quickly and it mighty tasty. Adding in the blackberries is a way to create a fresh summer drink.
To reduce bitterness, add a pinch of baking soda prior to brewing and remove tea bags as soon as the pressure has been fully released. This is as fast as you can add the ingredients to the pot and start it up. Plus hello Summer pooltime, it’s cocktail time. I added a splash of Raspberry Vodka to make it really interesting.
5 minutes active (+ time to come to pressure) and then allow 10 minutes for the natural release. Presto you have fresh tea.
What you will need for Ice Tea
The Ingredients are few and the process is simple:
8 c. water
6 organic black tea bags, paper tags removed
1½ c. fresh blackberries, divided
2 T. fresh basil, chopped
½ c. honey, preferably local
½ c. water
2 T. fresh lemon juice
Raspberry Vodka or even lime Vodka
Optional garnish:
Fresh blackberries
Fresh basil sprigs
Step by step Directions to make Blackberry Ice Tea
- Add water, tea bags, and a half cup blackberries to Instant Pot® and stir to combine. Add lid and lock into place. Switch the vent to “Sealing” and set the “Manual” setting to 5 minutes.
- While the tea is brewing, add remaining blackberries, basil, honey, and water to saucepan set over medium heat. Cook, gently pressing on the blackberries to release their juices while continually stirring the mixture to combine, for 4-5 minutes. Once honey is completely melted and the mixture starts to thicken, remove from heat and set aside.
- When cook time on Instant Pot® is complete, allow pressure to release naturally for 10 minutes, then do a quick release to release any remaining pressure.
- Carefully strain hot tea mixture with a fine mesh strainer. Pour the reserved liquid into a large, heat-resistant pitcher and sweeten with the blackberry honey simple syrup, to taste. Add fresh lemon juice, an ounce of vodka and stir to combine.
- Serve immediately over ice with fresh blackberries and a sprig of fresh basil for garnish. Enjoy!
