Old El Paso Tortilla Bowl
The bowls are pretty awesome, mini and regular and I figured they would be great as condiment bowls, twice the fun, half the mess right? Using the bowls for all the taco fixings saves on dishes after supper ( and with a broken dishwasher that is a bonus). I decided to use the regular bowls for the shared fixings and then the mini bowls I filled with sour cream and homemade guacamole. Individual servings for everyone, plus the bonus is you can use the condiment bowls for shredded chicken and/or ground beef dinner bowls.
Taco Bar by the Pool
The Victoria Day long weekend we decided the weather was perfect for a Mexican Feast and moving it outside by the pool allowed us to pretend we were back in the Yucatan Peninsula. Mexico will always hold a special place in our hearts, our first all inclusive family vacation with the boys was in Cancun. We took the opportunity to book our vacation at the same time that Carly was studying in Merida. It allowed all five if us to blend together as a family and share quality time together. The memories we share as a family every time we eat tacos….. PRICELESS

Shredded Chicken Recipe
Quick and easy slow cooker recipe
- 2 packages chicken Thighs
- 1 package Old El PASO fajita seasoning
Place chicken things in the slow cooker
add one half of the package of seasoning.
place cover and keep on low for several hours.
When you think chicken is ready ( we waited seven hours) remove the bones, add remaining seasoning and shred the chicken with two forks.
- Turn heat down to warm until you are ready to serve. How simple and easy is that.
Can one honestly have a Taco Bar without Guacamole? I mean yes one can go the store route for the mundane but why? In a very short time frame you can whip up your own guac and make it sizzle.
A quick and easy Guac recipe
- 2 Avocados
- 1 onion small
- 1 clove garlic
- 1 tomato chopped
- 1 lime
- salt and pepper
Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.

Fun observation the mini tortilla bowls are actually the perfect meal size for the young’ins in your life, plus the no mess bowl allows little hands to hold on tight without losing all the fun stuffing.
