The Lazy Enchilada
Enchiladas are pretty much the ultimate comfort food: cheesy, meaty goodness wrapped in a tortillas and slathered in flavorful sauce…and more cheese! But who has the time???
I’ve been a huge fan of frozen taquitos for ever as a tasty snack, but this takes it to a new level. . T Simply smother chicken or beef taquitos in enchilada sauce and cheese, and you’ve got yourself a simple family meal that everyone will love, even the pickiest of kids.
This recipe will have piping hot deliciousness ready to serve in 20 minutes.
Ingredients for Enchiladas
My lazy enchilada recipe calls for just four simple ingredients. Got your list ready? Lets get ready.
- Frozen Taquitos
- 16oz Can Refried Beans
- 1 Can Enchilada Sauce
- 8oz Shredded Cheddar Cheese
How Do You Make Lazy Enchiladas
This recipe is kid proof meaning even a child could make this quickly and easily,
- Spread the can of beans out evenly so they coat the entire bottom of a casserole dish.
- Lay the Taquitos on top of the refried beans.
- Coat with enchilada sauce.
- Place in the oven for 15 minutes.
- Remove from the oven and sprinkle with cheddar cheese.
- Place back in the oven for 5 minutes or until the cheese has fully melted.
This quick and easy dinner casserole will soon be a family favorite! It’s not only the laziest meal you’ll ever make, it’s crazy delicious.
