There I said it, now face palm right? Could not be helped a post about Gin has to have a pun or at least a play on words. 2020 ended on a high note, I got to partner with Empress 1908 Gin and who wouldn’t love that. I even created my own version of a Clover Club.

Empress 1908 Gin
Live colourfully that seems to be the motto of Empress 1908 Gin. A motto that also seems to fit this gal and her blog perfectly. I am nothing if not colourful. So how could I not love a gin that changes from blue to pink to periwinkle to Indigo.
Empress 1908 Gin wanted to create an extraordinary cocktail experience that would delight the senses. And I will tell you they sure succeeded. Micro-distilled in small batch copper-pot stills, Empress 1908 is handcrafted using eight carefully selected botanicals. The inspiration and ingredients are what make Empress 1908 an exceptional gin.
The Gin was/is a collaboration between Victoria Distillers and the legendary Fairmont Empress Hotel in Victoria, British Columbia. Empress 1908’s combination of taste, delicate aroma, and remarkable presentation has provided the perfect base for a new aesthetic of cocktail creation and enjoyment.
And did I mention how smooth it is? I went from a turn my nose up at the thought of gin to an Empress connoisseur over the holidays. Being truthful here, Kent has always loved Gin but i was not to fussy about it.
On top of traditional botanicals, they add a signature blend of black tea served at the Empress Hotel and butterfly pea blossom, an exotic herb that balances the traditional citrus notes of gin with a warm herbal earthiness, and gives the gin its natural indigo colour.
Let’s Make some Gin Cocktails
Back to the collaboration, an opportunity to test out a few cocktails or create my own. Hmmm, why not try both right. Kent an I set out working our way through the Signature Cocktails on their site.
Seemed like a decent plan to me, it was Christmas, we were off on Holiday and the gin is spectacular. The fun part of mixing the cocktails is the gin itself. Reacting with the various ingredients the colour is constantly changing.
Cinnamon 75 as an example is a beautiful pale pink with a little fizz, but First Frost remains a deep purple. My Clover Club creation had more of a steeped tea tint. Blues, mauves, pinks, peach and even layers all attainable with this tasty spirit.
Before you ask yes my Clover Club is the same but totally different. Or a lot different depending on your taste. Meaning we didn’t have any Raspberries so we went with a cinnamon stick instead. Plus Vermouth because why not.
Empress Clover Club
Lets gather the ingredients shall we and get stirring or maybe we should get shaking. I don’t know are you a shaken or a stirred kind of person?
- Empress 1908 Gin
- Dry Vermouth
- Simple Syrup
- Lemon Juice
- egg whites
- cinnamon stick
How Do I make a Clover Club
Are we ready? Ingredients have been gathered and now we just need to make sure we have the right equipment and we can get started. Actually you only need a cocktail shaker, a measuring glass and a cocktail glass of choice.
- Add egg white to shaker
- add the rest of the ingredients,
- Seal, hold tight, and dry shake, without ice, for 5-6 seconds.
- Add ice, reseal tins and shake hard for 15 seconds.
- Strain into cocktail glass.
- Express a lemon peel over the top, then discard peel (for the aroma). Garnish with a cinnamon stick

Equipment
- martini glass
- Cocktail Shaker
Ingredients
- 2 oz Empress 1908 Gin
- 3/4 oz lemon juice
- 3/4 oz simple syrup
- 1 0z Vermouth
- egg white
- cinnamon stick
Instructions
- Add egg white to shaker
- add the rest of the ingredients,
- Seal, hold tight, and dry shake, without ice, for 5-6 seconds.
- Add ice, reseal tins and shake hard for 15 seconds.
- Strain into cocktail glass.
