I have made and shared the Margarita Pie and hopefully by now you have had a chance to check it out. If not, well what the heck are you waiting for? Its kid friendly, no alcohol, although the next one I try I may have to be a test case.
What you may not know is the recipe actually makes enough for two full pies and I decided to freeze the extra in the hopes of making another pie soon. Well inspiration struck. Sunday night we had Faijita’s for Dinner ( do you call it dinner or supper??) any woooo a Mexican Dinner seemed to scream Mexican inspired dessert. I figured the filling would be perfect for ice- cream ( and it was)
I dug out a few of my Taco Boats and decided I would coat them with butter and Cinnamon sugar for the perfect serving container. Bake the boats for about 10 minutes max at 350. Remove and let cool
Then get ready for some deliciousness….. fill the bowls with the Margarita filling, add a bit of lime zest and a slice of lime.
Really you have to try this, the perfect light dessert for summer enjoyment
Now my simple instructions
Blend them all together, place in container and freeze for a few hours.

Ingredients
- 1 cream cheese
- 6 oz margarita mix
- 1 can eagle brand milk
- 1 tub coolwhip
- lime zest
