If you recall I did tell you this been the summer of let’s try anything.  With no travel plans and limited Socialization happening we decided poolside activities would be fun. Now our definition of poolside may be different, we are talking cocktails first.  We are still making our way through the LCBO Rum Destination flyer. Today we are tasting the Merengue Chill. Unsure of what Rum Destinations is all about, well check out my Cruzan Schooner for a bit of insight.


Merengue Chill

Republic of Rum

Today we are featuring Brugal Anejo from the Dominican Republic.  Caramel, butterscotch and Molasses makes this rum perfect for sipping or mixed.  Brugal brought the rum industry to the DR and today they are bringing us the Merengue Chill.  Well actually LCBO and I am doing that but it is thanks to this flavorful spirit.

Funny story, we have several bottle of Brugal Anejo that Kent won during our visit in November.  We went to Punta Cana in November for the first time and during the pool games Kent was quite the competitor. We were able to bring a taste of the Islands home with us.

What you will need for the Chill

Another time for a shaking not a stirring cocktail, so lets get started shall we.

  • 1 1/2 oz Brugal Anejo
  • 1 Tbsp fresh Raspberries
  • 1 Tbsp Fresh Strawberries
  • 1/2 oz lime juice
  • 1/2 oz simple syrup
  • Mint Sprig for Garnish

Equipment needed

  • Cocktail Shaker
  • Highball glass or my Pool side safe Version

How to Make  a Merengue Chill

  1. Fill cocktail shaker with ice
  2. add rum, raspberries and strawberries
  3. pour in lime juice and simple syrup
  4. Shake well
  5. Strain into glass with crushed ice
  6. Garnish with Mint Sprig
  7. sip and enjoy

Rum Destination From LCBO

What a fun little flyer, not sure when we received this but I saved it.  It was filled with Rum Cocktails and featured all the rums of the Caribbean. Presenting a great opportunity for Kent and I to reflect back on past vacations and remember the great times we had. Let me know if you try out the Merengue Chill or any of the other flavours of the Caribbean I will be sharing.

Merengue Chill

Savouring the Flavours of the Islands with a smooth rum cocktail. Dominican Republic will be on your mind while sipping this refreshing drink with a hint of mint and a taste of berries
