No Bake Rainbow Bit Cheesecake

Am I the only person that falls in love with a recipe on Facebook and then changes it?  Honestly the whole point of finding recipe inspiration is to test it out right? This No Bake Rainbow Bit Cheesecake is just such a recipe.


I recreated The Brownie Cheesecake which was another example of me loving the look, getting hungry and saving a video.  Only to go back and feel that I can do it better. Well doing it better times two happened. If Chocolate is awesome what about “birthday cake” rainbow bits.

Maybe that is really what it is all about, being inspired and then creating your own concoction.

Rainbow Bit Cake or Birthday Cake

I am fascinated with Birthday cake.  No I do not mean ” Birthday Cakes”. Totally referring to white cake with sprinkles tossed throughout.  Is there a prettier cake available?  Probably the most photogenic cake out there actually.

What you will need for the No Bake Rainbow bit Cheesecake

Five simple ingredients and no oven required. How amazing does that sound.  Plus if you are like me you stock most of these ingredients so you can whip this up easily.  Company drops in unexpectedly and you can have a dessert ready in minutes.

  • Cream cheese
  • cool whip
  • sugar ( I am thinking of trying a pie without this ingredient next time)
  • vanilla
  • plus a whole box of Rainbow bit Cake mix.
  • graham crust
  • whipping cream
  • Baileys Chocolate Cherry liquor as a treat

This is one of those Mom said don’t eat the batter raw, instead, eat it unmixed.

Step by Step no bake Cheesecake Directions

  1. blend the cream cheese, sugar and vanilla together
  2. add cool whip and gently fold
  3. mix in cake mix
  4. pour mixture in the  premade graham crust (or make your own)
  5. refrigerate for a few hours
  6. serve (add whip cream as garnish)
  7. add a spoonful of Bailey’s Cherry Chocolate liquor to the whip cream as a special treat

Ingredients

  • 2 bricks Cream cheese
  • 1 full tub cool whip
  • 1/4 c powdered sugar I am thinking of trying a pie without this ingredient next time
  • 1 teaspoon vanilla
  • 1 box plus a whole box of rainbow bit cake mix.
  • pre made graham crust

Instructions

      yikes, how did i forget that part. I added them above to the recipe card. It is 2 blocks/bricks of cream cheese, i tub of cool whip, 1 teaspoon of vanilla and i added 1/4 cup powdered sugar but I think it is fine without this step.
