It is still a crazy world so that means the cooking and baking continues. Drowning our remoteness and feelings of isolation in comfort foods. Tonight on the agenda some Orange Cranberry Scones. I mean its like a biscuit only better for you because it has fruit.
OK I totally made that up, can a scone be good for you? Or is the real question can a scone be bad for you? The answer, of course not. If it tastes great and makes you feel good the voila, GOOD FOR YOU.
Loving the Quarantine Canteen experience. Honestly trying out recipes we have not tried has been a great experience. The bread turned out fabulous and now these scones. Good thing I am walking a minimum 10000 steps a day.
Orange Cranberry Scones and the Time Needed
Get ready or this fun little recipe. 15 minutes to prep, 20 minutes to chill and baking time of 18-22 minutes. Honestly who doesn’t love a recipe that provides clean up time while you are waiting.
You know what that means right? It’s a recipe that encourages you to sit down and enjoy them as soon as they are done. GUILT FREE no less. Because the kitchen is already tidy, table is set for snacking and you are set to enjoy.
Prep time: 15 minutes + 30 minutes to chill
Baking time: 18-22 minutes
Yields: 12 scones
What you will need for the Ingredients:
I am going to break this down into two sections, scones and glaze. Lets get started shall we, for the scones you will need:
- all-purpose flour + ¼ c. for work surface
- baking powder
- granulated sugar
- salt
- cold unsalted butter
- heavy cream
- sour cream
- large egg
- vanilla extract
- orange extract
- orange zest,
- craisins
and the simple Glaze
- powdered sugar
- fresh orange juice
Lets get Baking Orange Cranberry Scones
Like most of my recipes this one is simple and easy to follow. And the outcome, well totally worth it.
- Line a large, rimmed cookie sheet with baking parchment paper. Set aside.
- Mix two cups flour, baking powder, sugar, and salt in a large mixing bowl. Cut in butter with fork until butter is in pea-sized pieces.
- In a separate bowl, combine the heavy cream, sour cream, egg, vanilla extract, orange extract, and orange zest. Whisk to combine.
- Fold the wet ingredients into the dry ingredients just until combined. Add in the craisins and stir until just mixed.
- Sprinkle ¼ cup of flour onto a clean work surface. Transfer scone batter onto floured surface and lightly knead into a ball. Press the dough down into a ½” high rectangle (approximately 6” x 10”). Cut in half lengthwise, and then each half into 3 rectangles. Then, cut each rectangle diagonally to create triangle-shaped pieces.
- Transfer the scones to the prepared cookie sheet, leaving 1-2” between them. Refrigerate for at least 30 minutes before baking.
- Pre-heat oven to 400°F, then add the cookie sheet to oven when ready. Bake the scones for 18-22 minutes, or until they are nicely golden brown and cooked through. Remove from oven and cool for 5-10 minutes.
- While the scones are cooling, prepare the orange glaze by stirring the powdered sugar and orange juice together in a small bowl until thoroughly combined.
- Serve the scones warm drizzled with some of the orange glaze on top. Enjoy!
