Holy Batman, do you know what today is, I mean seriously, it’s like one of the best days of the year. IT’S PANCAKE DAY….. the day we have permission to eat pancakes all day long, I mean really three meals plus snacks if ya want to..Do you celebrate Pancake Day(Shroud Tuesday)? I do, always have, loved coming home to my mom making pancakes for supper, I mean how cool is it, your a kid and your mom makes pancakes for supper, no veggies, no meat, nothing but lots and lots of pancakes.
Tonight Kent will make me grown up Chocolate Chip Pancakes, what are grown up CC pancakes you ask??? Well take your pancake recipe and substitute 1/4 cup of Baileys for 1/4 c of the milk and there ya have it. Perfection. ( plus you still must add lots and lots of little chippits).
Today is Pancake Day and if you like pancakes as much as I do and like Bailey’s even a little bit you will love this recipe modification. I am sitting here stuffed from my wonderful supper but I just had to share. ( Only thing is not many prep pictures as I was on the treadmill while Kent got supper ready.
How to make Pancakes
1 1/2 c flour
3 Tlb sugar
3 tsp baking powder
1/2 tsp salt
1 beaten egg
1 3/4 c milk 1 1/2 c milk and 1/4 c Baileys
2 tlbs Oil
Add wet mixture slowly to the dry ingredients and mix until combined.
Best pancakes ever and not suitable for the kids. Bailey's make the perfect twist to an old favourite
- 1 1/2 c flour
- 3 Tlb sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 beaten egg
- 1 3/4 c milk 1 or 1/2 c milk and 1/4 c Baileys
- 2 tlbs Oil
- Add wet mixture slowly to the dry ingredients and mix until combined.
- Heat griddle and then pour batter.
- For an extra treat sprinkle chocolate chips into the batter and VOILA.
