Last summer I made some fancy deviled eggs for an Angry Bird Party I was hosting. Well tonight after setting my Easter Table I thought I should really recreate the pastel eggs. Seems a fitting dish for Easter doesn’t it. Pastel Deviled Eggs are the perfect Easter Accent, or maybe a Pastel Egg Salad Sandwich
The Coloured Devil Eggs
1) First boil the eggs ( place the eggs in cold water, bring to a boil and then remove immediately from the heat, set timer for 20 minutes and then remove.
2) Peel the eggs under running cold water
3) Cut eggs in half and remove yolk
4) add a few drops of food colouring to cold water
5) place eggs in the coloured water and leave until desired colour
( the longer they soak the darker they will be)
6) Blend yolks with mayonnaise, salt and pepper
7) Remove eggs from water and let dry
8) add yolk mixture to eggs and sprinkle with paprika
