Where has the time gone, seems like yesterday we were celebrating Mothers Day and now Memorial Day is almost upon us. OK yes I am fully aware that I am Canadian but that doesnt mean I cannot celebrate along with my American friends right? This Patriotic Cookie Cake is a quick and easy Memorial Day Dessert.

Memorial Day Celebrations
This weekend while I am celebrating Canadian style and enjoying Victoria Day, my American friends and family will be celebrating Memorial Day. Celebrating seems the wrng term when talking about remembering those who have died in the service of their country. I kind of think of it like an Irish Wake, while gathering in sadness, its time to celebrate the life they led and what it actually means.
Celebration
Ironically while the day is about honouring those who have served and lost their lives, it is rarely a somber occasion. Many Americans observe Memorial Day by visiting cemeteries or memorials, holding family gatherings and participating in parades. Unofficially, it marks the beginning of the summer season.
Today we are combining the two, prepping some patriotic desserts which are the perfect kick off to summer.

Ingredients for a Fun Patriotic Cookie Cake
Time to get baking but who wants to spemd all their time in the kitchen this weekend, am I right? A few simple ingredients and you are ready to make my Patriotic Cookie Cake dessert.
Ingredients
- 16.5oz Sugar Cookie Dough
- 8oz Whipped Topping
- 1lb Strawberries
- 1 Pint Blueberries
How to Make a Patriotic Cookie Cake
This is so very easy to make, and FUN. YEP F U N. You can decorate with fun shapes. Cut the berries into shapes, go randon, go flag like or stick to a basic circle. A Patriotic Cookie Cake is simple and easy.
- Pre-heat oven to 350 degrees.
- Using a non-stick round pan, lay out the sugar cookie dough.
- Bake the cookie as directed on the packaging.
- Remove from oven and transfer to a cooling rack.
- Let the cookie cool before smothering in whipped topping.
- Slice the strawberries in half and create a red and blue design on top of the cookie using the strawberries & blueberries.
