Baking for the Holidays
Peanut Butter Balls or Buck Eyes
Now, I realize that some of you call these “Buckeyes” or “Buckeye Balls”. Major difference true Peanut Butter Balls are completely covered in chocolate and true Buckeyes are bare on top. I actually had never heard of buckeyes until I got hooked on Pinterest. Searching for peanut butter desserts and they would pop up in my feed.
It didn’t take me long to realize they were quite similar but I grew up calling them peanut butter balls, so peanut butter balls they are.
What you will need for Peanut Butter Ball with Rice Krispies
- 2 cups peanut butter
- 1/2 cup melted butter
- 2 cups icing sugar
- 2 cups coconut
- 4 cups rice krispies
- 12 ounces chocolate chips ( small bit of oil or paraffin wax)
Let’s Get Rolling or Balling
- Mix peanut butter and butter, stir in coconut and icing sugar
- Add in rice krispies ( best to mix by hand but very messy)
- Chill one hour
- Roll into one inch balls
- Melt chips with bit of oil or paraffin wax, dip each ball in chocolate, set on cookie sheet and let chocolate harden
- I cool them in the garage and then keep them stored there over the holiday season
Tips for Peanut Butter Balls
I recommend putting the peanut butter mixture in the fridge for 1-2 hours before rolling.
Also if you find that the balls aren’t rolling very well and seem to be sticky, add a little more icing sugar and Rice Krispies.
It’s easier to dip the balls if they’re refrigerated for an hour before dipping them in the melted chocolate
