Summer pies are the best especially when they are made as a Cheesecake. Ok I know that many people prefer fruit pies, especially in the Summertime but I love this creamy base better. In addition, this Pina Colada pie can be served as is or frozen, your choice.
There is nothing wrong with berry pies, are fruit pies, I mean honestly who doesn’t love a good Peach Pie this time of year , am I right? I, on the other hand am a fan of my Cheesecake Liquor Series. Can it be called a series if there is only two? I have shared the Margarita Pie in the past and yes even a Pina Colada Pie but today I have amended the recipe. Pina Colada Pie Recipe
This summer I started experimenting trying to create quick and easy desserts. Something that when company drops pie you always have something ready or can quickly get ready. This simple four ingredient pie is sure to dazzle. Plus as an added benefit, this can be made ahead and then you freeze it.
I have kept the Tarts in the freezer for two weeks and they taste just as delicious as when I first made them. Trying to get fancy I added some fresh fruit, plus it makes it feel legitimately healthy.
I did really want to add some coconut to the top to accent the tropical goodness, but I erred and forgot that I was toasting coconut. My added concoction ended up not edible. Moral of the story, don’t forget coconut in the oven for an extended period of time.
I also think a little orange zest might by tasty. It’s completely up to you how you want to garnish your pie. It is delicious plain to so do not fret over what to do.
Ingredients for the Pina Colada
The ingredients are really simple for this pie ( or tarts if you prefer). And bonus for me, all ingredients I always keep on hand.
- cream cheese 1 package
- cool whip softened
- pina colada mix
- fruit for toppings
- graham crust
- extra whip cream on yop for garnish

Blend cream cheese

slowly add in cool whip

stir in Pina Colada Mix

add to pie crust
-
refrigerate until serving ( freeze if you prefer)
Can I freeze this pie? Yes you can, I have frozen the pie and tarts for up to two weeks.
Recipe for Pina Colada Pie
4 Ingredient Pina Colada Cheesecake Pie or Tarts
Ingredients
- 1 pkg cream cheese softened
- 1 tub coolwhip softened
- 1 Graham Cracker Premade pie crust
- 6 oz Mott's Pina Colada Mix
- Garnish pineapple coconut, strawberries
- extra cool whip for garnish
Instructions
- Blend cream cheese
- slowly add in cool whip
- stir in Pina Colada Mix
- add to pie crust
- refrigerate until serving ( freeze if you prefer)
