Happy Cheesecake Day? Is that a thing you ask, well I am not sure but I think it should be. I m sure you have all seen the Eggie Cheesecake posted by Taming Twins. Well honestly who did not want to try that one. I veered off track and used my President Choice Eggies and it worked perfectly.

Taming Twins and her Eggie Cheesecake
Truth be told I did not find this recipe on Pinterest initially. One of my work colleagues made two of these beauties for a potluck dinner we had. Well I walked into the Boardroom and it was instant love. The beauty of the cheesecake was well… perfection. .Caroline shared she had found this on Pinterest and she shared the link.
The recipe threw me off initially, I mean where was one to find double whipped cream and chocolate digestive biscuits? Obviously the Canadian Editions were slightly different. Once I realized digestive biscuits were totally similar to graham crackers I was on a roll. The toughest part of this recipe, chopping the eggies and then not eating it all. .
Easter Dessert in a No Bake Eggie Cheesecake
This cheesecake was the perfect Easter Dessert. Light and fluffy and no bake, I mean does it get any better than that?
What you will Need for the Cheesecake
The ingredients are pretty straightforward
- crushed graham wafer
- butter
- icing sugar
- cream cheese
- whipping cream
- eggies
Lets get Making and Baking

melt butter
-
add butter to graham crumbs and pour into springform pan

press crumbs into pan

whip the whipping cream or try cool whip ( reserve some whip cream for a topping 1/2 cup

slowly add cream cheese and beat till smooth

add crushed eggies ( fold in)

pour mix into gram crust and set in fridge for at least two hours, overnight is better

remove from pan

add a dollop of whip cream to center of pie and cover in eggies

serve and enjoy

Ingredients
- 2 c crushed graham wafers
- 1 c melted butter
- 1 c icing sugar
- 2 bricks cream cheese regular
- 2 c whipping cream
- 1/2 c crushed eggies
- 1 c eggies ( some crushed
Instructions
- melt butter
- add butter to graham crumbs and pour into springform pan
- press crumbs into pan
- whip the whipping cream or try cool whip ( reserve some whip cream for a topping 1/2 cup)
- slowly add cream cheese and beat till smooth
- add crushed eggies ( fold in)
- pour mix into gram crust and set in fridge for at least two hours, overnight is better
- remove from pan
- add a dollop of whip cream to center of pie and cover in eggies
- serve and enjoy
