Saturday began my baking frenzy and I may have made Shortbreads, Raspberry Thumbprints, and Swedish Strips. Plus Oreo Truffles, Peanut Butter Truffles, Peanut Butter Blossums and even Gingerbread Mousse Cups. Even Macaroon Cups, White Chocolate Mousse and Chocolate Chip Shortbread,. Let’s not forget the Creme Caramel Sandwiches, snickerdoodles and Cookies and creme blossoms. Holy crap, 13 types over the weekend I guess some may think that is a tad crazy.
Well Today I think we should focus of the Raspberry Thumbprints but you are more than welcome to visit all the other recipes too. I mean why not. If I can bake ton, you are more than welsome to browse, pin and try right?
What you need for the Raspberry Thumbprints
- 1 cup butter softened
- 1/2 cup brown sugar packed
- 2 egg yolks
- 2 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 egg whites fork beaten
- 1 cup finely chopped walnuts or other nuts
- Raspberry Jam ( with seeds)
How to Make Thumbprints
Thumbprints are a very easy cookie to make. Honestly the messiest part is the egg white dip and rolling in the walnuts. I keep searching for an easier way to accomplish that task but, the end result is worth the gooey mess.
- Cream butter and brown sugar; beat in egg yolks.
- In separate bowl, combine flour, baking powder and salt; add to butter mixture and mix well.
- Form dough into small (1-inch) balls; dip in egg whites to coat; roll in chopped nuts; place on baking sheet 2 inches apart.
- Create an indent in the middle of each ball of dough by pressing down with your thumb, creating a “nest-like” shape.
