Roll Around Shortbread made with chocolate candies. I mean honestly shortbread and candies all mixed together in a ball.  Little balls of goodness. Does it get any better than that?  Well maybe shortbread with Buttercream but that is a recipe for another day lol. 

Found this recipe in a magazine, compliments of Gaylea several years ago. I mean honestly what is not to love. Shortbread, chocolate candy and icing sugar (confectionery sugar).

Roll Around Shortbreads


The perfect cookie, not too sweet but delicious. I love the fact that this one uses regular sugar adding a slight different texture. I use the candies but I am curious about using a cherry or some other similar fruit. Adding an illusion of healthy to a fun cookie.

What you need to Bake these Cookies

Gather the ingredients and lets get rolling shall we

  • unsalted butter
  • granulated sugar
  • egg
  • Mexican vanilla
  • flour
  • baking powder
  • miniature candies
  • icing sugar

How to Make and Bake Roll Around Shortbread

  1. Preheat oven to 350
  2. Using electric beater combine butter and sugar until light and fluffy
  3. Beat in egg and vanilla
  4. In separate bowl mix flour and baking powder.
  5. Using a wooden spoon gradually stir flour mixture into egg mixture.add candies/fruit at the end.
  6. Using rounded tablespoons full of dough, roll into balls
  7. Place on parchment paper lined cookie sheets.
  8. Chill for at least one hour up to one day
  9. Bake in center of oven for 10 minutes, cool for 3 minutes
  10. Sift icing sugar into shallow bowl, roll cookies in icing sugar
