It’s Saturday and that means it is cookie time… who doesn’t love cookies on Saturday? Or any day for that matter. The sad news is this is the last of my pre-planned Christmas Cookie Recap, my infamous Shortbread Cookies.
Unfortunately I only made and took pictures of 12 types of cookies and squares this year. OK how crazy is it that I would think 12 different varieties of cookies is not enough. Shortbread Cookies
This has to be one of my favourite cookies. And yes I have made them year round. In fact I made Shortbread Cookies in the shapes of guitar pics for Kent’s 50th Birthday celebration. I am not sure we traditionally reserved these for Christmas only.
Actually I totally know, using a pound of butter in a cookie was reserved for special occasions. Growing up butter was not cheap so these were special. Shortbreads are perfect plain, dipped in chocolate or topped with buttercream. What is your preferred topping?
What do you need for Shortbread Cookies
The ingredients are so very very simple, three items. I promise you they are also ingredients we always have on hand.
- 1 lb of butter
- 1 1/2 cups icing sugar
- 5 cups flour
How to Make this decadent Scotch Cake
Sorry I had to throw that in, do you call them Shortbread cookies or Scotch Cakes? Name aside because yes a rose by any other name is still a rose, or in this case a cookie. Simple steps for a simple cookie.
- Mix and work together
( I usually beat butter first, slowly add in icing sugar, then add flour gradually) - Roll out and cut into various shapes.
- Bake at 300 for 30 minutes.
