Tuesday I had to stay home and wait for the furnace repairman so I thought I would surprise Kent with dinner. Now if you know me you know he is the cook I am the baker. Slow Cooker Salsa
I stuck to Randa’s basics, slow cooker, chicken and salsa. I mean who can go wrong with that combination. True confession time, I am an old timer, as you can probably tell from my slow-cooker. Over time she has continued to serve me well so I have not progressed to an Instant Pot yet. Am I crazy, is there really a difference?
Are you a slow cooker gal or an Instant Pot babe? Or do you call it a crockpot? Inquiring minds really want to know.
Crockpot Salsa Chicken
Simplicity thy name is Salsa Chicken. Four chicken breasts, a half jar of salsa and a ton of seasoning. Voila best chicken you can make. And in the crockpot almost no time invested or required. Plus zero weight watchers points. It also presented the perfect opportunity to play with the “shredders” we had purchased. Kent and I discovered the perfect utensils for shredding pork, chicken or beef.
Kale Slaw
While Randa shared a homemade slaw and fresh corn Tortilla’s I opted for the easy way out. We had two packages or pre-made corn tortillas and a left over Kale salad. I am totally addicted to the pre packaged Kale salads from Loblaw’s. The Dietitian from our local store highly recommended them. The sweet kale salad was a perfect combination with the salsa chicken.
Shredded Salsa Chicken with a Sweet Kale Slaw
Ingredients
- 4 chicken breasts
- 1/2 c salsa
- italian seasoning or spices you prefer
Instructions
- place chicken in slow cooker
- add in salsa and seasoning
- turn slow cooker on high for 4-5 hours
- turn to low for an hour
- remove chicken breasts and shred
