It is almost time for the big game and that calls for food, lots of food. Any excuse for entertaining and for creating tasty new dishes. This year I have been experimenting with Beyond Meat to create fun alternative dishes. How does a Slow Cooker Vegetarian Chili sound for a new dish?
We have been experimenting with less meat and more plant based so this was a natural choice. I know lots of folks love a veggie chili but I love the texture of burger. Seems to add a fullness to my dish. Beyond meat is a great alternative to those of us looking for small changes.

With the biggest football game just around the corner its time to think food. I know football and ads should be the main topics but how about tasty delights. What are your fav snacks? Are you a healthy or hearty or a mixture of both?
Chili seems to be a national standard no matter where you are from. So many variations and adaptations out there to choose from. Today I am going plant based but not just beans. Testing out Beyond Meat and sharing the experience. Creating this vegetarian chili in the slow cooker is the newest variation in our household.
Honestly take a look, looks the same, smells the same and tastes, well close. The texture is perfect and like all chili’s tastes however you season it.
Vegetarian Chili Experiment
This recipe can easily be adapted to a vegan chili simply by adding the proper toppings. What I actually mean is skip the cheese and sour cream and this becomes a perfect began option. Now on a serious note I am talking Super Bowl but y’all know this is good for any time right?
Chili is one of the works Comfort foods. On a list along with Shepherds Pie, Meat loaf and Beef Stew our go to dishes to remind us of home. Well those are my comfort food options. Perfect for cold winter days and nights. Recipes that are usually simple and easy to make and provide a warm feeling in our stomachs and hearts.
What you will need for Vegetarian Chili
Chili is a based on taste kind of recipe. If you are a hot and spicy person then the seasonings can be increased. Looking for something a tad milder, cut back on the hot peppers and som of the seasonings. Or just add cheese and sour cream to help cut the heat. as a special note ass seasonings are at least a tablespoon.Usually we dash and sprinkle.
- Kidney beans
- six bean blend
- tomato paste
- diced tomatoes
- pasta sauce
- chili seasoning ( 3 tbsp)
- cajun seasoning
- sriracha seasoning
- parsley,
- oregano
- basil
- Hungarian chili paste optional
- paprika (hot)
- garlic
- onion
- jalapenos
- red pepper
- yellow pepper
- beyond beef
Toppings for later
- sour cream
- avocado
- cheese shredded
- nacho chips
Lets get cooking- Chili time
Now is the time to gather all our ingredients and get creative. Prefacing my recipe with if ya like it hot keep adding seasoning and peppers. The more flavourful the better am I right? This slow cooker vegearian chili is seasoned to taste, meaning add additional seasonings if more spice is required.
- In a frying pan “brown” up the beyond beef
- In a slow cooker, combine bean blend, kidney beans, tomatoes, paste, sauce, onion and bell peppers .
- add in chopped jalapeno peppers ( dd more or less depending on your personal taste. Add a few small banana peppers if you like spicy.
- Season with garlic, chili powder, Hungarian paste, paprika, sriracha seasoning, parsley, oregano and basil.
- add beyond beef and stir everything together.
- Cook for at least two hours on High.
