Rainbow Buttercream Frosting and Cupcakes
Last Updated on 2023-03-28 by Linda
Can a Baby Shower be a real shower without fun cupcakes? I don’t think so. I mean I know some people are cake people but cupcakes are so much more personal. Plus with cupcakes you can control the Buttercream Frosting you add. Each cupcake gets a dollop or more of creamy buttercream frosting.

For the baby shower I may have gone crazy with the icing on the cupcakes but they make everything so very pretty. I am a big fan of Rainbow frosting. Truly the easiest thing in the world if you like original. Add a few spoonfuls of one colour of icing to your tube, then add a second colour and maybe even a third. The frosting will come out in a kaleidoscope of colour for you adding texture and originality
I used Yellow and Blue sticking with the nautical theme

My recipe for Buttercream Frosting
- 1 cup butter ( and you must whip the butter for fifteen minutes, that is the secret)
- 2-3 tsp Vanilla ( Mexican is what I insist on)
- 5 cups icing sugar
- 2-3 tbsp whipping cream ( or coffee cream or even Baileys)
- ( if you want chocolate add 2-3 tbsp cocoa)
There ya have it the easiest, tastiest icing you can have.
Do these not look awesome and mouthwatering…..
Buttercream Frosting
My recipe for Buttercream Frosting is most likely similar to yours. My secret is in the whipped butter. Trust me on this one folks, the creamier the butter the better the frosting. Butter Cream says it all don’t you think? Funny story to share when I first started spending 15 minutes whipping the butter it was with a hand mixer. True story I promise, I did not own a “real bakers mixer”. I then progressed to using a Sunbeam from the 70’s. i thought it was the bomb till I saw the same one in an antique store. I am telling you getting my Kitchen Aid was a game changer.

How to Make Butter Cream Frosting:
- adding the butter to your mixer, set the time for fifteen minutes and let the magic begin
- slowly add in vanilla. I prefer Mexican Vanilla for a richer taste
- gradually add in the icing sugar/confectionery sugar
- add the whipping cream. At this step you can instead add flavoured coffee cream or even Bailey’s for a twist. If you want chocolate this is where you would add in a few tablespoons of cocoa.
