OK Don’t hate me, I know we are still recovering from our Christmas baking sprees but how about some Valentine’s Day treats. Sharing a Valentine’s Day Rocky Road Square that didn’t last long in my home. Not only are they pretty and festive they are scrumptious.
Valentine’s Treats
Normally we are out of town celebrating the heart day. WE have my Birthday, Anniversary and Valentine’s all within two weeks. And it is one of the coldest times in Ottawa, so yes we usually head out on a cruise or all inclusive warm vacation.
Looks like 2021 will be a cold celebration so I want something to make me warm inside. Plans for a romantic dinner for two (plus Lou) are underway. And I thought maybe trying some new desserts might be in order. White chocolate decadency seemed a fitting way to start the year. Normally I would be looking at Truffles or maybe melting cake but the white chocolate was calling my name.
Rocky Road Treats
Growing up Rocky Roads were traditional milk chocolate, marshmallows and nuts. My gosh just stating that is making me hungry for sweets. But I digress, todays treat is a take on the traditional square. Inspired by the Christmas Rocky Road Delights we all saw on Facebook I wanted to create something new.
Not really sure where the recipe truly originated but the earliest postings seem to be from Pankobunny so shout out to her for the creative ideas. She added macadamia nuts and I skipped that step and maybe added extra choclate lol.
Ingredients you will need For Rocky Roads
The ingredients are quite simple and this is a recipe easy to amend or adapt. I have tried this with peppermint and without. For Valentines Day treats I actually added some Rum Extract, come on, its for an adult dinner.

800 grams white chocolate

250 grams unsalted butter

1/2 cup corn syrup

3 teaspoons pure rum or peppermint extract (optional)

300 grams mini marshmallows
-
1 1/4 cups Red and pink coloured candies

heart sprinkles
How to Make Rocky Road Squares for Valentine’s Day
It is a pretty straight forward recipe but work fast once you add the marshmallows because you don’t want them to melt fully.
- Place the white chocolate, butter and corn syrup in a pot over medium-low heat. Stir consistently until completely melted. Don’t worry if the chocolate and butter have separated.
- Remove from the heat, and stir the mixture with a spatula or a whisk until the chocolate and butter have fully combined.
- Add the rum extract and allow to cool slightly.
- Add the red and pink candies and marshmallows and mix until just combined.
- Pour the mixture into a square aluminum container, and sprinkle some extra candies and cute icing decorations on top.
- Cover with aluminum foil and place this in the freezer until set.
- Slice the rocky road into bite-sized squares, and you’re done!
Tips: The squares work perfectly if you prefer to add a rum or bourbon instead of extract. I wouldn’t recommend changing if the kids are around but for adults only it is perfect.
They also freeze well if you want to savour the joy and save for later ( or make in advance).
The first batch did not last long, so looks like I will try another version, maybe this time I will add walnuts for something different.

- 300 grams mini marshmallows
- 1 1/4 cups Red and pink coloured candies
- heart sprinkles

- Place the white chocolate, butter and corn syrup in a pot over medium-low heat.
- Stir consistently until completely melted. Don't worry if the chocolate and butter have separated.

- Add the rum extract (or even a dash of rum or bourbon yum) and allow to cool slightly.
- Add red, pink and white candies and marshmallows and mix until just combined.
- Pour the mixture into a square or rectangle container, and sprinkle some extra candies and cute icing decorations on top.
- Cover with aluminum foil and place this in the freezer until set.
- Slice the rocky road into bite-sized squares, and you're done!
