This is one of the easiest cookie recipes that I have ever tried yet the most exhausting. Whipped Shortbreads without a stand mixer is a workout lol. I do not have a Kitchenaid Mixer I would love to be an ambassador for you LOL), I have a very old Sunbeam from like 1972 and it does not whip properly for me.
Thus the 10 minutes of whipping I am doing with my handheld thus exhausting, go figure 10 minutes should not be tiring right but holding that mixer, good lord thought my arm was going to fall off. Morale of the story continue weight training if you want to be a baker.
What you need for Ingredients for Whipped Shortbread
You will need the same ingredients you used for the Traditional Shortbread Cookies:
- 1 cup butter
- 1 1/2 cup flour
- 1/2 cup icing sugar
How to make Whipped Shortbread
Simple instructions, the same as regular shortbread except of course lots of whipping
- Combine all ingredients and beat for ten (10) minutes.
- Preheat oven to 350.
- Drop a teaspoon of dough onto cookie sheet
These ended up to brown for my liking but apparently everyone else loved them because after the open house I had none left.
Bake 15- 18 minutes.
