I sure have been sharing a lot of pumpkin recipes lately but than again why not. It’s a Pumpkin Spice Time of year time of year. Like Christmas but without the fun decorations and presents.

White Chocolate Chip Pumpkin Cookies
This tasty little morsel can whip up quickly. Maximum ten(10) minutes of prep and they are ready to pop in the oven. 15 minutes in the oven and you are eating cookies and drinking milk. I mean how awesome does that sound. Chewy White Chocolate Chip Pumpkin Cookies call for cold milk am I right?
Funny story I was making Pumpkin chocolate chip cookies before Pumpkin became “cool”. I haven’t made them in yeas and I am asking myself WHY. well no longer today is the day and I am ready to share. Pumpkin not your vibe, wth, here is a basic chocolate chip for you instead.
Ingredients for Chewy White Chocolate Chip Pumpkin Cookies
The ingredients are quite simple, but it is how you put them together that makes the difference in the chewy factor.
- 2 ½ cups all-purpose flour
- 1 ½ teaspoons baking soda
- 1 ½ tablespoon pumpkin pie spice
- ½ teaspoon salt
- cup butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- egg
- 1 ½ teaspoons vanilla
- 1 cup canned pumpkin
- 2 cups white chocolate chips
How to Bake this chewy Delight
Anyone else always think Cookie Monster when you start baking? That little Blue Guy was a fav of mine. Maybe because I have always been a cookie addict. Anyway, lets get making shall we?
- Preheat oven to 350°F.
- In a large mixing bowl, combine granulated sugar, brown sugar, salt & butter.
- Add the egg, vanilla & canned pumpkin.
- Mix well.
- Pour in the flour, baking powder & pumpkin spice.
- Mix well.
- Stir in the white chocolate chips.
- Place tablespoon sized cookie dough mounds onto a nonstick baking pan.
- Bake for 15 minutes or until edges are lightly browned.
- Transfer to a cooling rack and enjoy.
