Loaded Chicken Potato Casserole
chicken breasts potatoes
red russet cubed
paprika we used Bourbon Paprika
fiesta mexican blend cheese or monterey jack and cheddar cheese blend
Preheat oven to 400°F
In a large bowl, mix together the olive oil, hot sauce, salt, pepper, garlic powder and paprika.

Add the cubed potatoes and stir to coat. add the cubed chicken Then add the mixture to a greased baking dish.5. pat mixture down 6. Roast for 45-50 minutes,
Add Cheese, bacon and green onion to dish and place back in oven 9. Bake 15 minutes or until until the chicken is cooked through and the topping is melted and bubbly delicious.
I have to tell you it was delicious and is super as a re-heated dinner as well. The one change he recommended was to blanch the potatoes first so they are softer, he thought his were still to firm.
