Garlic-LIme Chicken with Avocado Salsa
You truly will feel that you have been trasported to the streets of Mexico with this delicious dish
small pkg of grape tomatoes
mexican chili powder
wash and dry all produce, cut tomatoes in half. Mince the garlic,
chop the cilantro
zest then juice the limes, Halve, pit and then cut the avocado in blocks, Peel and husk the corn
Marinate the chicken- combine half the lime juice, half the zest, half the garlic and half the chili powder in a medium bowl. Add the chicken and set aside.
add the chicken to a non stick pan, cook until golden-brown.
The salsa- in a medium bowl whisk the remaining lime juice and the honey with a drizzle of oil, add salt and pepper. Add the tomatoes, avocado and cilantro. Mix well
divide the chicken equally on two plates, and then top the chicken with the Salsa mixture.
Serve and enjoy
Give yourself extra time or prep everything the night before.
