I was not kidding you when I said this was a two ingredient dessert but I guess you could also add some candy decorations making this a three ingredient treat.

12ready made iced mini cupcakes
Willet chocolate meltsor white chocolate chips maybe two colours
crushed candy cane
Separate the icing from the cupcake, although in hindsight I am not sure why I did this because it all gets mushed together
combine the icing and cake into one bowl and mush together, leave the sprinkles on for a fun twist.
melt your candy melts in the microwave. I go 30 seconds at a time
.once the chocolate is melted cover the bottom and sides of the molds, this doesn't need to be thick. Make sure it is all covered. Let set for a few minutes. This is a good time to actually mix the cake batter, Helps distract you and allows the chocolate to set.
add in a dollop of cake batter. Be careful to leave room at the top for the final layer of chocolate.
Insert your popsicle stick now
add final layer of chocolate, clean up the edges while the chocolate is still warm. Trust me once it hardens it is tougher to remove.
place mold in the freezer for a few hours ( or if you live in Northern Canada the garage works well lol)
Remove the cake pops gently from the molds
Place on parchment paper and add some additional chocolate drizzle and sprinkle with decorative candies. This step is optional but makes for a really pretty pop.
If these are for gifts, wrap in cellophane and tie with a bow or place on a serving plate and enjoy.
I keep them in the freezer because they thaw so very quickly and it keeps the chocolate firm.
The cake pops are really and truly an easy dessert but they do take some time. You need to let the pops settle in the freezer for a few hours to set the chocolate
