Sunday is a time for relaxing, a time for contemplating and yes even a time for baking. Our neighbours have an amazing garden and provide us with fresh beans, tomatoes, lettuce and my fav Zucchini.  Today I wanted to use all the zucchinis she handed over the fence so yep, Quick and Easy Zucchini Bread.

Zucchini Bread and cooking with Veggies

I love cooking with zucchini and today I thought I would share my Zucchini bread with you,  not a family handed down recipe just one I found in an old cookbook several years ago and it has become a house favourite.

Zucchini Bread Ingredients

  • 3 C flour
  • 2 1/4 C Sugar
  • 1 tbsp salt ( I use sea salt always)
  • 3  tsp Vanilla ( always Mexican)
  • 1 tsp baking soda
  • 1 C vegetable oil
  • 1 tsp Baking powder
  • 2 C grated Zucchini
  • 3 tbsp cinnamon
  • 1 C chopped Walnuts
  • 3 eggs
Gather all your ingredients together and get your work space prepared.

How to Make Zucchini Bread

Thi is one of the easiest zucchini  breads I have made. I usually gather everything together and then start the process. Clean up can be done while the bread is in the oven.
  1. I always begin with grating the zucchini, that way it is all prepared.
  2. Grease and prepare two loaf pans and preheat oven to 350 degrees
  3. Sift together flour, salt, baking soda, baking powder and cinnamon, set aside .
  4. In separate bowl beat oil, eggs, sugar and vanilla, beat until well blended. slowly add in one cup of flour mixture at a time.
  5. add zucchini
  6.  add walnuts
  7. do not overblend the mixture, you can actually mix by hand if you prefer
  8. add to greased pan,
  9. bake 40-60 minutes ( my oven actually took 70)
  10. check centre after 50 minutes to see if cooked through remove from oven, let stand for 20 minutes and then remove from pan.

    As soon as you can, cut and butter to have warm bread ( LOL)  honestly you should let it cool to allow for smoother cuts but personally I like warm bread better than I like uniform cuts.
