A few weeks ago I shared my excitement at receiving a box of goodies from Hello Fresh. And when I say goodies I actually mean three full meals for Kent and I. Three very delicious meals that I wanted to share with you. Today I thought i would re-create and share the recipe for the Tandoori Meatball Curry. Plus as a side tip with the addition of extra beef and rice we were able to serve five with this recipe.

Flashing back a bit to when I first received the Hello Fresh Order. It is quite fascinating to arrive home to a big box on the front step. I opened the package to three boxes each labelled and stuffed with fresh produce and all ingredients needed. Underneath was a small insulated section packed with ice where the meat was stored. Tandoori Meatball Curry with Saag Aloo
The Tandoori curry dish was delightful and truly easy to adapt for additional guests. This one was slightly more complex to follow and requires you balancing a few pots at the same time. Multi tasking is a requirement.

Hello Tandoori Meatball Curry
I really enjoyed the Tandoori dish but will confess it took us slightly longer to prepare then the card indicated. I would suggest reading the directions through first before you start prepping. Prepare all the ingredients in the natural grouping and then start cooking. I think that may have sped the process up slightly.
The food was delicious and something I would try again.
Tandoori Meatball Curry
Ingredients
- 1 lb ground beef
- 340 g mini yukon potatoes
- 113 g basmati rice
- 1 small red onion
- 56 g spinach
- 5 tsp tandoori masala
- 10 g garlic
- 30 g ginger
cummin, turmeric spice blend (2 tsp)
- 1 c coconut milk
- 1 c tomato paste
- 10 g cilantro
Instructions
- prep meatballs, mix the ground beef with half of the masala, roll into one inch balls. Heat pan over medium high with a drizzle of oil. Add meatballs and slowly roll as they brown all over (3-4 minutes) once done place on plate
